Here's a few useful Belize related links. If you want a quiet, out of the way place, very laid back, try 
Hopkins Inn in Hopkins, Greg & Rita
are very helpful & friendly. Their cabanas are nice & the
breakfast is fantastic. If you want to do a little kayaking check out
Island Expeditions. The Pelican Beach Resort did a great
job organizing our wedding. It's a nice beach side resort. Chaleanor
Hotel (ph: 501 5 22587/22481) in Dangriga is affordable & Chad was
very helpful getting us organized for our impromptu trip to Hopkins.
If you need a cab in Dangriga call Bennett's Taxi, (015-1640), James
drove us to Hopkins and picked up a pizza for us. Very friendly guy.
By the way, did I mention that the pizza (Dangriga Pizza) was great,
unfortunately I've lost the number, its a little far for delivery
anyway.
